Taco Salad Recipe

My mom gave me this recipe and it’s really all about the dressing! I have tweaked it and included alternate ingredient options below. This one is a staple in our house and we have it at least every other week! Quick to throw together and filling!

Salad Ingredients

  • Head of iceberg lettuce (you can also mix in kale and/or romaine)
  • 1 lb ground beef or ground turkey
  • 1/4 cup taco seasoning
  • Green onions (chopped)
  • Tomatoes (diced)
  • Avocado (diced)
  • 1 cup shredded cheddar cheese
  • Tortilla chips (optional)
  • Black beans (optional, I normally don’t add)
  • Corn (optional, I normally don’t add)

Dressing Ingredients

  • 4 tbs sugar (sub coconut sugar)
  • 1 tsp salt
  • 1 tsp ground mustard
  • 1 tbs poppy seeds
  • 2 tbs dried minced onion
  • 1/4 cup apple cider vinegar
  • 1/2 cup extra virgin olive oil (sub avocado oil, vegetable oil, canola oil)

Instructions

  • Brown the ground beef or turkey on the stove. Add taco seasoning and 2/3 cup water.
  • While the meat is cooking, wash and chop the lettuce.
  • Add the rest of the salad ingredients except the tortilla chips.
  • Mix together all of the dry ingredients for the dressing in a bowl. Add the apple cider vinegar and olive oil. Whisk until combined and set aside. Re-whisk before dressing the salad, as the ingredients will separate.
  • Add the browned and seasoned meat to your salad bowl. Add the dressing.
  • Toss your salad and add crushed up tortilla chips on top if you want. Enjoy!
